Three sweet recipes you should try out during lockdown

When it comes to being home a lot more than we're used to, I think it’s time to get creative on how to pass time more quickly. One way, which I have found very effective and appealing is baking. So, today I have brought you the recipes of three sweets which I have made, tried out and really liked!

Fanta Cake

Ingredients for the mixture:

  • 6 eggs
  • 2 tablespoons of dark cocoa powder
  • 6 tablespoons of icing sugar
  • 5 tablespoons of flour (gluten-free flour if you wish)
  •  1 teaspoon of baking powder

Ingredients for the cream:

  • 500g cottage cheese
  • 250g unsalted butter
  • 250g icing sugar
  • 2 teaspoons of vanilla sugar
  • grated lemon-peel

Ingredients for the top:

  • 1 pint of Fanta;
  • 100g vanilla pudding powder;
  •  5 tablespoons of icing sugar

Method:

  1. Separate all 6 egg yolks from the whites into two bowls. Nex, add the cocoa powder, the icing sugar, the flour, and the baking powder to the egg yolks and mix them together. Whisk up the egg whites and mix the two mixtures together. Pour into a cake tin and bake in the oven (180 degrees celsius) for 15 minutes.
  2. Mix together all ingredients for the cream. After taking the baked cake out of the oven and leaving to cool, pour the cream mixture on the top.
  3. To make the third layer, mix the Fanta, the vanilla custard powder and the icing sugar together in a pot and boil it until it has a smooth consistency. Then, pour it on the top of the cake. Put the cake into the freezer for 3 hours, then enjoy!

Jam Rolls

Ingredients:

  • 6 eggs
  • 6 tablespoons of icing sugar
  • 5 tablespoons of flour (gluten-free flour if you wish);
  • 3 teaspoons of baking powder;
  •  raspberry jam

Method:

  1. Separate all 6 egg yolks from the whites into two bowls. Next, add the icing sugar, the flour, and the baking powder to the egg yolks and mix them together. Whisk up the egg whites until forming stiff peaks, then mix the two doughs together. Pour it into a flat and wide tin, and put it into the oven (180 Celsius) for 15 minutes.
  2. When the dough is ready, cut off the edges and pour the raspberry jam all over on it. Then carefully roll it up as it can be seen in the picture.
  3. Sprinkle some icing sugar over the top if you wish.

Blueberry and Chocolate Muffins

Ingredients:

  • 2 mugs of flour (gluten-free flour if you wish)
  • 1 mug of sugar
  • 1 egg
  • 3 teaspoons of baking powder
  • 1 mug of milk
  •  ½ mug of oil
  • 3 tablespoons of dark cocoa powder
  • dark chocolate
  • blueberries

Method:

  1. Mix the flour, sugar, egg, baking powder, milk, oil, dark cocoa powder, and some blueberries in a bowl. Chop up some dark chocolate and add it to the mix
  2. Pour the dough into small muffin cups. In a preheated oven of 180oC bake them for roughly 20 minutes, or until a skewer inserted into the centre of a muffin comes out clean.
