Course Overview

Poor nutrition negatively impacts on population heath and socioeconomic development. This course is a journey through some of the key milestones that underpin the discipline of Nutrition. It gives an historical perspective of food and nutrition and describes how malnutrition can impact on health and development. It also describes what constitutes a healthy diet, explore the different components and ethical aspects of the food system. Ethical, cultural, physiological and behavioural factors influencing food consumption are also covered.

Course Description

This course will introduce several aspects of nutrition science, delivered into 3 modules, each one tested by an MCQ class test. The first module includes an historical perspective of food and nutrition and an overview of the impact of malnutrition on development and health. What constitute a healthy and balanced diet will be described, particularly in relation to chronic diseases such as cancer and cardiovascular disease.

The second module will provide an overview of the impact of lifestyle and nutrition on chronic disease.

The third module will provide an introduction to the food system and its main components in relation to food security and related ethical considerations. Various aspects of relationships between food and consumers will be presented, including an overview of cultural perspectives of food choices and dietary practices, such as vegetarianism, veganism, fad diets and their potential risk for health as well as food allergies and intolerances. Ethical considerations of food advertising and marketing, as well as psychological aspect of food choices will also be considered.
