Elmine studied at the University of the North West and University of the Free State in South Africa. She is a lecturer at the Department of Nutrition and Dietetics of the University of the Free State, Bloemfontein, South Africa. She is a dietitian and started the first lifestyle management programme on campus with colleagues - a medical doctor, a psychologist and biokineticist. Her areas of interest include nutrition, sports nutrition, quantity nutrition, teaching and education, corporate wellness and lifestyle diseases. She has developed a plate model using South African cultural foods, that is used for nutrition education. She also developed recipes for the Sports Commission in South Africa. She helped to develop the DESSA (Diabetes Educator Society in South Africa) Basic course for health care professionals in South Africa (Section A) and was mainly responsible for the DESSA Registered diabetes educator course (Section B) that was launched in April 2011.

She regularly gives talks on the national and various regional radio stations in South Africa and has published and co-published in scientific journals, co-supervised post-graduate research projects and has done numerous presentations at national and international symposia and congresses.
